BOILED ICING
A fluffy cake frosting made by gradually pouring a hot sugar syrup over stiffly beaten egg whites, beating constantly until the mixture is smooth and satiny. An Italian meringue is made in the same manner.
Ingredients:
1/2 c water
2 c refined sugar
2 tbsp corn syrup
3 egg whites
1/2 tsp cream of Tartar
Procedure:
Boil water, sugar and corn syrup until mixtures forms a thread. DO NOT STIR!
Beat egg white until soft peak forms but not dry.
Slowly add sugar syrup to egg whites while beating vigorously until hard peak forms.
Add coloring or flavoring if desired.
